PERFECT YEAST DONUTS

INGREDIENTS 

1 1/4 C Milk - warm

2 1/4 tsp yeast or one packet

3 1/2 C All purpose flour

1/3 C White Sugar 

1 tsp Salt 

1/4 tsp Nutmeg

1/4 tsp cinnamon - optional 

3 Tbsp Shortening - melted 

1 Egg 

Glaze 

1 Cup Powdered Sugar

1 tsp vanilla extract 

3-4 Tbsp Milk 

DIRECTIONS

  1. Make sure your milk Is the temperature of warm bath water. TOO hot and it will kill the yeast. TOO cold and the yeast won’t activate 

  2. Now that we have our warm milk add a tsp of sugar and the yeast. Stir gently and set aside. After 5-8 minutes it should start to foam. If after 10 minutes you don’t have any foam the yeast Is dead and you need to do it again.

  3. In a large bowl combine flour, sugar, salt, nutmeg, and cinnamon 

  4. Add the yeast, egg, and melted shortening mixing until it starts to come together. With a dough hook or by hand knead the dough for 5 minutes. Dough should be smooth. 

  5. Grease a bowl cover and set in warm place to rise for 1 1/2 to 2 hours until double in size. I usually put dough in my oven or microwave obviously on off. 

  6. Once dough as doubled lightly sprinkle work surface and roll out dough until 1/2 inch thick. With a donut cutter cut donuts working first on the outside and working your way in (glass cup and shot glass works just as well) you can gather the scraps roll out again. Try not to do it more than twice. Place donuts on baking sheet and allow to rise again for 30 minutes until doubled again. 

  7. Make the donuts glaze by combining all ingredients mixing until smooth

  8. Heat vegetable oil until 350-360 degrees. If you don’t have a heat thermometer a great tip is to use the donut holes as your testers. If the donut hole doesn’t float up after a few seconds the oil isn’t hot enough. If the floats and browns to quickly the temperature is to high. It should should about 1-2 minutes per side. Donuts should be golden brown. Cook in batches and do not overcrowd 

  9. Once golden brown remove and place on rack or paper towel lined baking sheet. While still warm dip donuts in glaze. You can do just one side or dip both sides for a Krispy Kreme shattered glass look. 

  10. DEVOUR!
